Sheet cakes decorated with red, white and blue berries for the Fourth of July are the summer version of Halloween's graveyard dirt cakes — sort of comforting in their ubiquitousness, but not terribly appealing and usually produced more for looks than taste. But I must have a soft spot for holiday-themed desserts because this year I've made a revamped version of a graveyard cake and now this, a sophisticated spin on a red, white and blue dessert. Instead of soggy sheet cake, light and airy meringue shells are the base for a bright strawberry sauce, fresh whipped cream and handfuls of sweet summer berries. And this recipe is gluten-free!

It always surprises me that pavlovas aren't more popular here in the States, especially given the popularity of gluten-free desserts in general. When I serve them, there is usually at least one guest who has never heard of pavlovas, and is always amazed at how good they are — light yet decadent, full of fresh fruit and whipped cream, with the special crisp-but-soft texture of the meringue base.

Making mini pavlovas is no more difficult than baking one big shell. I use the top of a pint glass to trace circles on parchment paper, then flip the paper over and spread the whipped meringue evenly over the circles. You end up with eight meringue nests; each makes a dessert just right for one person. (If you need fewer than eight, the pavlova shells freeze well for up to one month.)
I find that the sugary meringue needs a tart sauce to cut through the sweetness, so I make a very quick strawberry sauce with just enough sugar to balance out the flavors. Add a dollop of freshly-made whipped cream and an assortment of your favorite summer berries and you have a dessert that is fancy enough for grown-ups, but full of the sweet, summer flavors that appeal to the kid in all of us.

Mini Summer Berry Pavlovas with Strawberry Sauce

Serves 8
1 pound strawberries, hulled and cut into quarters
1/4 cup granulated sugar
1 teaspoon lemon juice
1/2 cup heavy cream
1 tablespoon powdered sugar
1 teaspoon vanilla extract
mini pavlova shells, baked and cooled
2 cups fresh berries (any combination of raspberries, blueberries, blackberries, or sliced strawberries)
Combine the quartered strawberries, granulated sugar and lemon juice in a small saucepan over medium heat. Cook, stirring, until sugar has dissolved and the liquid at the bottom of the pan is simmering. Remove from heat and let cool slightly. Using a blender or food processor, process the fruit into a smooth sauce. Transfer to a covered container and refrigerate until cool. (Sauce can be made and refrigerated up to 3 days in advance.)
Combine the cream, powdered sugar and vanilla in a bowl and beat with an electric mixer until stiff peaks form.
To assemble, place a pavlova shell on a plate and top with a spoonful of strawberry sauce, a dollop of whipped cream and a scattering of fresh berries. Repeat with remaining shells. Serve immediately.

Recipe Notes

  • The baked pavlova shells, once cooled, can be kept in an airtight container for several hours, or frozen for up to 1 month. Thaw for 2 hours at room temperature.

We've featured Ana White before, like when we shared her creative instructions for building your own backyard see-saw! I stumbled across her newest project while looking for a thin console table to fit into our foyer. I love the idea of making our own furniture — now we just have to find an area that suits the building process! 
In her newest tutorial, with detailed PDF instructions, Ana guides us through making our very own modern-style slatted console table: a perfect addition to a narrow hallway or entry way. Plus, (here's the part I love) the instructions are free! I can't wait to get started on this one — perhaps a before and after is in order! 5 Tips To Get More Time To Yourself

1. Take time for yourself to start each day.
I can't emphasize enough the importance of doing this to help reduce stress and burnout. You can't give away something you don’t have, so make sure you make time for you. Are you able to get up an hour earlier to devote time to you, undisturbed? Or find an hour each day, just for you? Even if it’s only half that, find whatever time you can somewhere in your day.
The hour I give myself each morning is my hour of power. It’s how I prepare and take on the day. Without it, my day is never the same. The days that I slip and decide not to take that time for myself are the days I feel less energized and motivated, and I’m usually less productive, too. I find that I don’t eat as well as I normally do, so everything is affected.
Whether you use it for exercise, a brisk walk, stretching, meditation or running affirmations through your mind is entirely up to you. Try one or several of these, or find something else that connects with you. Experiment with options until you discover a daily feel-good ritual that gives you the most benefit and enjoyment.
2. Establish a regular routine. 
This doesn't just things like going to bed and getting up at the same time, but also a work and lifestyle routine. When we have no structure or organization, we become distracted and procrastinate, and nothing really gets done. This is when anxiety and stress make themselves known. By attempting to maintain a balanced routine without becoming rigid, you'll find that you’re more at ease, have more time and experience an overall sense of peace and well-being.
3. Think about delegating. 
What are you able to let go of and hand over to someone else to do? No matter how hard we try, we really are unable to do everything ourselves without it affecting other areas of our life. It could be as simple as having your family do some of the household chores or buying your groceries online and having them delivered fresh to your door — especially if you don’t like traveling to and from the store, waiting in lines, finding a parking space and carrying heavy bags.
Delegation is a skill we need to learn not only at home — it’s a critical business skill that, when cultivated, allows for a healthy work-life balance. Even if you’re not comfortable delegating, try it and watch your personal life, business life and well-being all flourish.
4. Make a list or become aware of where you spend most of your time. 
Are you able to find an area where you could spend less time? If you’re in a position to do so, buy back your time and share your wealth: Pay someone else to do the things that take you away from your priorities.
5. Spend less time with consuming media. 
Are you on Facebook, Instagram, Twitter and YouTube, or downloading the latest app at every possible chance? Are you constantly on Google searching the web? Are you able to turn your phone off for an hour a day, or turn it off at a certain time on particular days? Could you check your emails less? Could the television be turned off?
Whatever the solution is, find it and create a system that works for you. Without balance, your life will eventually spiral out of control.

"Appointment viewing", watching shows by their scheduled broadcast times, is still the most popular method of watching television. But according to Nielsen, last year the average American watched nearly 30 hours of television on the internet, and about five and a half hours on their mobile phone. With so many of us already watching entertainment via the web, it's likely more of us are going to enjoy series specifically produced for our browsers like these five...
One of the best parts of new shows being developed just for the web? There's literally something for everyone in the family. Here's five shows that represent the wide range of options:
Remember Kids Say the Darnedest Things? Written By a Kid is like the internet version of the show, except the kids' stories and wild ideas get brought to life. The results are fabulous.
Producer/director Bryan Singer, most famously known for X-Men, is behind this series which takes place in a future where humans are connected to the internet at all times thanks to embedded chips. Things get scary when bio-technology becomes infected with a virus, taking down a big chunk of humanity. This show exhibits seriously high-quality production and could compete with any traditional TV show. 
This show is exactly what it says: a series about child prodigies. These kids are inspiring, the show a thought-provoking joy to watch. 
So a monster loses his job as a...monster. As a result, he tries out a wide variety of other careers. Obviously, a monster can only be good at so many things. For the most part, this cartoon is kid-friendly, so load it up onto your tablet, phone, or laptop for the kids to enjoy.
Neil Patrick Harris is adorable. Puppets are fun. And both even more so when those puppets are interacting with the very charming NPH. I recommend previewing these episodes before sharing with kids. There's some adult puns in quite a few episodes.
